Chicken Taco Bowtie Pasta

This recipe is basically two of my favorite things mixed together - tacos and pasta - how did I not think of this before?! A delicious taco-tasting pasta dish that can be served hot or cold. Top with crunchy crumbled Doritos before serving for a quick, flavorful meal that everyone will love.


Chicken Taco Bowtie Pasta

A fiesta of flavors in a quick, family-friendly meal!

Makes: 4 servings

Cook time:

  • juice of 1 lime (about ¼ cup)
  • 2-3 tablespoons cumin (to your taste)
  • 2-3 teaspoons chili powder (to your taste)
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/3 cup fresh cilantro, chopped
  • 1/3 cup olive oil
  • 1/2 can black beans, rinsed and drained
  • 1/2 cup corn, canned or frozen
  • 1 cup salsa
  • 1 tomato, chopped
  • 1/2 small white onion, diced
  • 2 cups cooked bowtie pasta
  • 2 cups cooked, shredded chicken
  • 1 cup shredded Mexican cheese
  • Crushed Doritos for topping (optional, but I strongly suggest it!)
  • Instructions:
    1. Whisk together lime juice, spices, and olive oil in a small bowl until combined. Set aside.
    2. Cook pasta per package instructions in large sauce pan. While cooking, chop cilantro, tomatoes, and onion. Drain pasta once done cooking and add back to sauce pan.
    3. Add chicken, tomatoes, onion, black bean, corn, salsa, lime sauce, and cheese to the pasta and stir together. Top with crushed Doritos just before serving (so they don’t get soggy) and enjoy!

  • You could definitely replace the chicken with another meat or add more beans and veggies to make it meatless! This makes a great side dish as well.
  • This can be served hot or cold like a pasta salad.
