Cheesy, Creamy 20-Minute Mac and Cheese

I love mac and cheese. What’s not to love? Cheese, pasta, comfort food at its finest. I found this recipe in Food Network Magazine and decided to give it a try - it’s so delicious and very easy to make! And oh so creamy and cheesy (see picture 3). This recipe can easily be jazzed up with your favorite mac and cheese ingredients (buffalo chicken for me) and can also be doubled or tripled to feed a crowd. Enjoy!


Cheesy, Creamy 20-Minute Mac and Cheese

Comfort food at its finest in only 20 minutes!

Makes: 3-4 servings

  • 1/2 lb medium shell pasta (uncooked)
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 3/4 cup milk (I used 1%)
  • 1/2 cup half-and-half
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded colby jack cheese
  • 1/2 teaspoon dijon mustard
  • dash paprika
  • dash hot sauce
  • 2 oz cream cheese
  • salt and pepper to taste
  • Instructions:
    1. Bring a large pot of salted water to a boil Cook pasta until al dente, about 8 to 10 minutes.
    2. While pasta cooks, melt butter in a large saucepan over medium-high heat. When it starts to foam, add flour and stir until pasty, making a roux. Whisk in milk and half-and-half and bring to a simmer. Cook for about 5 minutes or until the mixture looks thick.
    3. Add cheese to the mixture slowly and dtir until melted. Stir in the mustard, paprika, and hot sauce. Add the cream cheese and stir until melted. Add in pasta, mix together, season with salt and pepper, and serve!

  • Jazz this up with any add-ins you want - add chicken, bacon, veggies, sauces, you name it.
  • This recipe could be doubled or tripled to feed a crowd!
