Easy Shrimp Fried Rice

This recipe is a staple in our house - we make it at least once a month. I swear it is super easy and also super delicious! You can make this quicker than if you were to get take-out, and way cheaper too!

Easy Shrimp Fried Rice

A quick, flavorful meal that tastes like your favorite take-out!

Ingredients:
  • 3/4 cup uncooked minute brown rice (about 1 ¼ cups cooked rice)
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon cooking oil (I like to use safflower or grapeseed oils)
  • 2 cups frozen Asian vegetable medley
  • 2 raw eggs
  • 1/2 lb. frozen, cooked shrimp, tails removed
  • 3-4 tablespoons soy sauce, more or less to taste
  • 1 teaspoon sesame oil
  • 1 tablespoon sriracha (optional)
  • Instructions:
    1. Add rice and ¾ cup water to a small sauce pan. Bring to a boil, then reduce heat to medium and cover, then let cook for about 10 minutes, stirring occasionally.
    2. While rice cooks, add cooking oil to a medium-sized saute pan over medium heat. Add diced onion and minced garlic, cooking for about 2-3 minutes until fragrant. Then add frozen vegetables and cook until soft.
    3. Add two eggs and scramble, mixing in with the veggies. Add shrimp, soy sauce, sesame oil, and sriracha and stir together, cooking for about a minute. Add in rice, stir, and serve!

Notes:
  • You could definitely replace the shrimp with chicken or pork, or make it veggie fried rice! This makes a great side dish as well.
  • I buy big bags of frozen shrimp and Asian veggie medley at BJ's - you save money buying in bulk and always have some on hand!
